Episode 8 – Tortilla, egg & salsa casserole

Take tortillas, eggs, salsa and cheese and before I even see a recipe, I know I’m in for a treat. Today’s dish is a perfect example of this wonderful combination of tasty ingredients. Some may argue this is not really a casserole but I tend to think of a casserole as a meal that ends up in one dish and that can be eaten directly from the pot or pan without the need for a side dish. Under my personal definition, this dish definitely fits the bill.

In what may be the easiest recipe (besides the Pizza Rolls) yet on Cuisine Made Quick, I fly solo in fixing one of my favorite Mexican breakfast feasts. In about fifteen minutes you can have yourself a hearty and spicy breakfast, lunch or dinner.

Elisabeth was home visiting family during the taping of this episode but she is not without appearance. The episode before this was supposed to be a recipe for a prosciutto and melon burger with sweet potato fries. Needless to say, things did not go as planned for that recipe. Some of the highlights of that failure can be seen in this episode.

Freezer Burns Tribute – Fried Pizza Rolls

I can’t get enough of Gregory Ng’s (the Frozen Food Master) Freezer Burns video podcast.  So when I found myself looking for a snack at 10 o’clock at night, I immediately went for the old standby – pizza rolls.

Greg did a “Fro-Down” of Pizza Rolls vs Bagel Bites back in January and I thought I would bring something new to the table.  Instead of cooking in the microwave or oven, I dropped the tasty morsels into cooking oil.  The results – delicious!

Episode 7 – Apple pie

Taking a break from the main course, in this episode Elisabeth and I make some pie.  With the possible exception of the sweet fried chicken recipe, I was more excited to taste the end result with this recipe than any other.  Elisabeth was schooling me in this episode from start to finish as I have never made a pie.  I have watched my mother make many delicious pies of endless variety but it always seemed like too much trouble to try myself (plus my mother lives a few miles away so there is always a pie opportunity should I need one).

Elisabeth, on the other hand, apparently took a bit more initiative growing up and actually paid attention to her mother’s recipe.  In my first pie making experience, Elisabeth walks me though the fundamentals of a good pie.  With apples in hand, Elisabeth helped walk me though my very first preparation of apple pie.

Episode 6 – Loaded biscuits & gravy

I must admit, I can think of no better way to start a weekend morning than a nice big breakfast or brunch. Elisabeth and I have made a habit out of enjoying a satisfying breakfast at least once a week. This past weekend we went all out with one of our favorite breakfast indulgences – loaded biscuits and gravy.

There are quite a few steps involved in this one so be prepared as the video and recipe directions are a bit longer than usual. The good news is once you get the recipe down, you can whip it together in less than 30 minutes. Also, many items in this recipe are up for substitution. The biscuits are essentially the base for whatever creation you desire. Keep that in mind as you watch and be creative.

Cuisine Travels – Oaken Barrel Brewing Company

After many meals at home, Elisabeth and I decided to hit the road this weekend for some micro brew beers. After doing some research online, we decided Oaken Barrel Brewing Company in Greenwood, Indiana was our best bet. Watch the video for our verdict.

Thanks to our good friend Jake for giving us the idea to grab some micro brews. The next time we are in the Milwaukee area again, we will be sure to get some video of the best micro brewery either of us have ever had the pleasure to tour – Lakefront Brewery.

Episode 4 – Sweet fried chicken with mac (farfalle) n’ cheese

It’s Wednesday night and you don’t feel like cooking a big meal but you also don’t feel like takeout. You start to give in to just having a bowl of cereal and then it hits you. Sweet fried chicken!

Perhaps one of my favorite chicken recipes out there – sweet fried chicken is easy, takes very few ingredients and is simply the best fried chicken I have ever tasted. However, just chicken fingers is hardly a meal and Elisabeth stepped up to fix some quick mac n’ cheese. So quick, in fact, she prepared it while the chicken was cooking.

I have to add that my good pal Greg over at Freezer Burns pointed out that technically my mac n’ cheese was really bow-tie/farfelle n’ cheese.  Who am I to question the Frozen Food Master and thus the title has been amended.  :-)

Episode 3 – Pumpernickel Pastrami Panini

After coming across this recipe numerous time in various books and on television, Elisabeth and I decided to put this one to the test. Was the combination of apple, cheese, pastrami and onion too much for our pallets or did we have our first official cuisine made quick?
