Looking in my fridge at yet more turkey, I decided I had to come up with some other way to use the leftovers besides another sandwich. After checking around a bit online I decided on a turkey pot pie. The recipe takes a bit to pull together but it is not difficult at all. The end result was well worth the effort.
Ingredients:
- 3 tablespoons butter
- 1 onion, chopped
- 2 stalks celery, chopped
- 3 carrots, chopped
- 4 tablespoons flour
- 4 cups chicken stock
- 2 potatoes, peeled and diced
- 2 cups shredded turkey
- 2 tablespoons chopped parsley
- 1/2 cup frozen peas, thawed
- 1 prepared pie crust
- 1 egg, lightly beaten
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
Preparation:
Melt butter in saucepan and cook chopped onion until tender. Stir in celery and carrots and cook for 2 minutes. Stir in flour and cook for 2 minutes. Add chicken or turkey stock and bring to a simmer. Add potatoes and simmer until tender. Stir in turkey, parsley, garlic powder oregano and peas.
Pour mixture into pie crust after letting cool for about 15 or 20 minutes. Top with pie crust and brush with egg. Bake for 10 minutes at 400 degrees and for 20 minutes at 350 or until crust is golden brown.
